PRODUCTION DETAILS:
For the first time, part of the sauvignon blanc grapes were grown on a new trellis system called Scott Henry. This system provides more foliage surface by dividing two fruit cordons - upward and downward. The result is a higher ratio of leaves to fruit in favor of a higher rate of photosynthesis. The grapes were hand picked then were carefully sorted and gently pressed. The juice was immediately chilled to 50¾ for settling. It fermented at temperature (58-60¾F) for nine weeks in stainless steel tanks to finish fermentation at almost complete dryness. The wine was filtered in March, prior to bottling.
