PRODUCTION DETAILS:
The grapes were hand-sorted on a sorting-table, destemmed & crushed,
followed by a 3 day cold-soak at 50°F. The fermentation went on
for 20 days with a peak temperature of 82°. To extract the most
flavors & the most color, the juice was gently pumped over 3 times
a day. Maceration (skin contact) lasted for a total of 22 days before
the grapes were gently pressed. Malolactic fermentation finished 100%
and the wine was racked a total of 5 times in its 17 months of barrel
aging.
