FULL DESCRIPTION:
This medium bodied Cabernet offers earthy notes of portabella mushroom along with blackberry and pepper. The velvety tannins on the palette give way to soft berry flavors of raspberry and cassis with hints of anise.

PRODUCTION DETAILS:
The grapes were hand-sorted on a sorting-table, destemmed & crushed, followed by a 3 day cold-soak at 50°F. The fermentation went on for 20 days with a peak temperature of 82°. To extract the most flavors & the most color, the juice was gently pumped over 3 times a day. Maceration (skin contact) lasted for a total of 22 days before the grapes were gently pressed. Malolactic fermentation finished 100% and the wine was racked a total of 5 times in its 17 months of barrel aging.
