FULL DESCRIPTION:
This
Burgundian styled chardonnay is showing notes of roasted Empire apples,
ripe pear with hints of crème brulee. The oak integrates nicely
with the ripe flavors. The acidity helps balance the rich creaminess
of this intense chardonnay. |

PRODUCTION DETAILS:
Following a hot growing season, the perfectly ripe grapes were carefully
hand picked and then passed over a sorting table to ensure that only
the healthiest & ripest grapes were chosen for this wine. The grapes
were gently pressed & the juice was immediately chilled to 50∞F
for the settling of the lees. After settling and at the start of fermentation
the juice was transferred into French Barriques to undergo the traditional
fermentation in oak. The fermentation took over 30 days to complete.
