PRODUCTION DETAILS:
A careful selection of ripe grapes was hand harvested & meticulously
sorted through for a final inspection to ensure the highest in quality
production. Whole cluster pressing occurred to preserve the aroma integrity
and acid balance. Gently pressed, the juice was immediately chilled
to 48¾F. It was settled, & the clean juice was racked prior to fermentation.
The juice was fermented at 58¾F in stainless-steel tanks, taking 62
days to finish to complete dryness & filtered in April 2006.
