BRIEF DESCRIPTION
Bright and lively with aromas of fresh fruit and refined dough

FULL DESCRIPTION
A light bright gold color, with a lively cordon of lather dancing on top of the wine, its fine bubbles rise up steadily to the surface. The wine develops fruity aromas of fresh apple and citrus, along with a refined dough aroma in the background. A pleasant tickling effervescence gently stimulates your senses. Fresh as a ripe apple, tasty as a red cherry, the wine finishes round and soft, with delicate complexity and finesse. Although the wine was young at the time of release, it shows a great potential for aging.

SERVING SUGGESTIONS
Great as an aperitif with "amuse bouche" (canapés), this sparkling wine will pleasantly surprise you when served with fish or seafood. Also, nice with lighter meats such as chicken or veal. This style wine is often preferred with dessert, particularly "Poire Belle Hélène" (poached pears). Serving temperature: 45°F to 50°F.

100% Estate Grown 37% Pinot Noir and 63% Chardonnay

HARVESTED
Grapes were hand picked first week of September 2000

PRODUCTION DETAILS
The grapes were carefully selected and then hand sorted over a special table for a final inspection, to ensure that only the healthiest and ripest grapes were chosen for this wine: the pale pinkish Pinot Noir and the yellowish-green Chardonnay then flowed into the press tub.

PRESSING
• Whole cluster pressing was done, respecting the gentle champenois cycles
• Pressing Yield: cuvée 120 gallons/ ton, taille 25 gallons/ ton
• Cold fermentation at 55°F with selected yeast
• No Malolactique fermentation.

BOTTLED
Tirage (Bottling): Bottled in May 2001. Final pressure: 6.5 bars Aging: 12 to 18 months on tirage (laying on top of the yeast sediment)

DISGORGING
May 2002 and August 2002, final pressure: 5.5 bars
