Pale, golden color with apple and floral aromas. This elegant wine displays a cordon of fine, delicate bubbles.
Fresh Fruit, nuts, shellfish, poultry, caviar and brie.
The grapes were meticulously sorted straight off the vine, and the inspected to ensure that only the healthiest & ripest grapes were chosen for this wine. Whole cluster pressing was done, respecting the gentle champenoise cycles. Pressing yield was cuvée 120 gallons/ton, taille 15 gallons/ton. Alcoholic fermentation occured during 5-6 weeks with the wine staying in contact with the yeast for 24-26 weeks gaining volume, roundness and a softer texture. Riddling of the sediment lasted 6-7 days, the bottles stayed "sur pointe" (neck down) for 1-3 months prior to disgorging. A "dosage liquor" (sweetened wine) was added to the wine at disgorging to polish the style of this consistently aromatic and stylistic cuvée. There was no Malolactique fermentation.
