Only made from the best vintages, showing notes of dried cramberry, earth, and violets. A soft medium bodied wine with generous amounts of soft velvety tannins with hints of cedar and dried currants.
This is the perfect wine for full flavored cheeses, rich Italian cuisine or any full flavored beef, lamb, or pork dishes. This wine is drinking beautifully now, but will benefit from 5-10 years of cellaring. Drink now through 2025.
The grapes for our 2010 Malbec were hand harvested and destemmed. The must was chilled to 50 degrees Farenheit for a 48 hour cold soak. The must was then heated and inoculated with BM45 Yeast and the fermentation ensued at 94 degrees Farenheit. When primary fermentation was finished the wine macerated on the skins for 3 weeks helping to develop rich tannin structure. The wine was then pressed off the skins and allowed to age for 19 months and racked a total of 7 times. This wine was bottled unfined and unfiltered.
